hey everyone I'm Denis from BBQ Joe's . Today is Sunday we're in the
middle of this Covid-19 pandemic sowhat else is there to do than to cook so
what I've got in mind today is a chickencordon bleu casserole cooked on the
Traeger and coupled with some nice supergarlicky garlic mash and I think I can
already taste it it's gonna be awesomeguys so stay tuned we'll be right back
right after this.
Okay guys well for our chicken cordonbleu we need the following ingredients
we need some chicken breasts, some slicedham cooked ham, 1/2 a cup of flour, 2 eggs,
2 TSP of garlic powder, 1/2 a cup ofbutter, 3 and 1/2 cups of milk and some
parsley flakes to sprinkle on top ohforgot something some shredded
mozzarella cheese now you could useSwiss cheese some people love Swiss
cheese but I love mozzarella so I'mgonna go with mozzarella it's up to you
guys do what you want and that I'm notgonna tell you how much to put we're
just gonna spread it around so it'll bemaybe whatever it is all right so we'll
get it going first we're gonna brine ourchicken we got to pound it and then brine it
all right before we geteverything done and start pounding our
chicken we're going to do our brine andlike I said before I have a very very
simple brine, quarter cup of sugar,quarter cup of salt, kosher salt
and four cups of cold water and then mixit mix it until everything is dissolved
we first need to pound our chickenbreasts to a quarter inch thickness and
then as soon as we're done we're goingto put them in the brine and put them in
the fridge for 30 minutes. Let's get thisgoing. So we'll put a saran wrap over top
just basically because we don't wantthis to splatter all over the place
all rightso let's put that in the fridge for 30
minutes no more
all right it's time to prepare ourcasserole let's get it going
so first layer is a layer of chicken
and then a layer of ham
and then a layer of cheese
and then the layer of chicken again
and another layer of ham
and then finally another layer of cheese. I'mgonna need a little more cheese here grab
some. Let me just grab some
now we'll put this in the fridge untilwe prepare our topping for it and then
it's going to be ready for the Traeger.I'll see you guys in the sec, in a
little bit.
all right so we're gonna getour topping going so what we have for a
topping is 1/2 a cup of butter, 1/2 a cupof flour, 2 teaspoons of garlic powder, 3
and 1/2 cups of milk and 2 eggs. So what we're first going to do is we're
going to beat down our eggs a little bit and
and then we're gonna put these eggs into the milk.
and we're just gonna stir that a little bit
Alright, that's done now let's start this up.
Put our butter into the pan, let it melt
and once that's melted we're gonnaput our flour in there and make up a
roux
so we're gonna add our garlic powder
and our flour
and our milk into the whole thing.
so what we're g ing to do now is get ourchicken out of the...or our casserole out of the
fridge and shut that off we're going toput that over
alright it's a little hot so I'm going to use this. We're gonna pour that over
I'd like to do is kind of push the sidesin so that the topping goes into the
sides
there you go so that's nice cake like oricing type of swirl. Let's take that out of the
way and we're going to sprinkle some parsleyflakes over top
hey voilait's ready to put on Traeger. So what
we're gonna do we're gonna go out thereand start our Traeger but in the
meantime when we start preparing ourpotatoes and our garlic for our garlic
mashed potatoes be back in a little bit
all right so now it's time to prepareour super garlicky mash potatoes. So what
we got for this we have of course russetpotatoes, we have some olive oil, we have
some garlic powder, we have some pepper, we have some sour cream, some milk, some
salt, some garlic of course and someParmesan cheese. So we're going to start
preparing our potatoes and our garlicand we'll put that out in the Traeger as
soon or as the same time we put ourcasserole
we'll be right back. All right let's start cutting our potatoes. What I'm gonna do speed up the process
is we're gonna chunk them and thenwe'll mash them after once we cook put
them in a casserole tray or baking dishI guess they'll cook a little faster than if
we keep them whole
Let's get the dish. We'll put a little bit of olive oil
We'll put that in there.
alright let's put this sideways. So ourgarlic, I'm going to cut the bottom out.
We'll put some olive oil in ourtray, our pie plate.
Put that in there, put that, that's it. So at the same time as the casserole bakes we're
going to be cooking our potatoes and ourgarlic so let's get out there
all right so our Traeger has reachedour temperature of 350 and so now
we're gonna put our stuff in. We'rebasically start with our casserole maybe
not, let's start with these. So we're going to put that in
then we're going to put our casserole. And then we're going to put this right over here, our garlic.
All right so now instead of timer for 45
minutes I'll keep an eye on the garlicand the in the casserole because I might
have to flip it over halfway, so I'llbe back in about 20 minutes to check up on it.
So it's been 45 minutesI don't think our casserole is quite cooked
but we're gonna take the potatoes in thegarlic mash I mean the garlic out of
there and we're going to keep thethe casserole in there may be for another
five to ten minutes
so we'll keep that in there formaybe five minutes five to ten not quite sure yet.
now it's time to take her out
ah...perfect perfect perfect perfect let'sbring that in
all right so we're gonna mash our our potatoes oh.. let me put a paper towel.
I think I've got a leaky pan. Put that on a paper towel.
Let's take that off and pull that in. ooh that's hot
Now we're going to need to mash them guys
Let's put these aside for a bit and let's bring our garlic. I'll take ah!!.. take them out of the cloves
so there they aresee how easy it comes out just pop them out like that
Perfect, put that in the foil see thatthey come out by themselves. That's
what I like about it, they all come out bythemselves. There you go, put that away
and mash these garlic. Mash them up
perfect
now let's bring our potatoes back in the picture. What we're gonna do is put all the
garlic in there any oil that you got and blend thattogether real quick and let's get the rest of our
ingredients.
put in our sour cream
stir it a little bit and our cheese Parmesangrated Parmesan by the away and let's put
some of our milk in there. We'll put it all All right I'm just gonna blend that
in a little bit then we're going to takea mixer to finish it up
and now we're gonna blend that
a little bit more milk
so we're gonna we're gonna add a littlebit of salt and then a little bit of
pepper and finally I'm gonna add maybe agood teaspoon of garlic powder
Now it looks really good looks yummy. All right so our garlic mash are all done no
they look great, they look great so we'regonna prepare a plate we'll get right
back to you.
All right so let's prepareourselves a little plate.
The tricky part
Let's take that out of the way. Let's put some garlic mash in there
oh yeah mm mmm mm. Let's take that out of the way.

Quite a few years ago I discovered this recipe for Chicken Cordon Bleu Casserole, tweaked it to my liking and fell in love with the outcome. This Chicken Cordon Bleu Casserole will blow your mind and the fact that this is so easy to make it will also become a staple in your family's cookbook. Now we coupled this one with our signature Super Garlic Mash Potatoes to make a meal that is just to die for. Amid this Covid-19 pandemic outbreak, there is nothing like a little comfort food to bring us back and make sense of things. Now here is how we did it. Ingredients for chicken cordon bleu casserole 7 boneless chicken 1/2 breasts 15 - 20 slices of ham depending on the size of the ham slices Shredded Mozzarella cheese or Swiss Cheese Topping 3-1/2 cups of milk 2 eggs 2 tsp garlic powder 2 tbs butter 1/2 cup flour Brine 1/4 cup kosher salt 1/4 sugar 4 cups water Directions Mix brine by adding all salt & sugar in water and mix well until completely dissolved. pound each chicken breast to 1/4" thickness Add flattened breasts to brine and refrigerate for 30 minutes After 30 minutes remove chicken from brine grease large 9" x 13" bake pan in pan lay 1 row of chicken then 1 row of ham and then 1 row of shredded cheese over top of each other respectively repeat process for 1 more layer of the three (chicken, ham, cheese) TO MAKE THE TOPPING beat eggs and add to milk and mix it well melt the butter in large sauce pan add garlic powder to hot butter slowly add flour while mixing it with the butter to form a roux once flour is all added and blended in with the butter cook on medium for a couple of minutes stirring constantly. Slowly add milk-egg mixture to the butter mixture, mixing constantly until completely added. Continue mixing until mixtures starts to thicken. Once desired consistency is reached remove from heat and spread evenly over layered meat & cheese Sprinkle some parsley flakes over top of casserole. (does nothing for taste but looks awesome. GARLIC MASH POTATOES Ingredients 6 - 8 Russet Potatoes ( Red potatoes are even better) 1 - 2 garlic bulbs 1 cup of sour cream 1/4 cup olive oil 1/2 cup milk 1 cup of Parmesan cheese 1 - 2 tsp garlic powder salt & pepper to taste 1/2 cup butter (forgot to add this in the video) Directions cut garlic bulb ends (by the roots) off in a pie aluminum pan add the olive oil and put the garlic bulbs in the oil cut end down cover with foil cut potatoes in 1" cubes add diced potatoes in a baking dish and cover with foil start your Treager and set to 350ºF once temperature has been reached add the Chicken Cordon Bleu Casserole, the potato dish and garlic bulb pan to Traeger grill and close lid. set timer to 45 minutes Once 45 minutes has completed, remove everything from grill set Chicken Cordon Bleu Casserole aside and cover to keep warm FOR THE GARLIC MASH POTATOES in a larger pan mash the potato cubes remove the garlic cloves from the bulbs skin (they should come off really easily if not just squeeze them out. mash the garlic cloves to form a paste. add the mashed garlic cloves and olive oil to mashed potatoes. add the butter, sour cream, Parmesan cheese, and 1/2 the milk and then mix well. using a electric hand mixer, mix it very well to assure that everything has blended well together. while mixing add more milk if necessary to attain desired consistency and fluff. add salt & pepper to taste and mix it in well if you do add these. Now it's time to prepare your plate. cut a piece of the Chicken Cordon Bleu Casserole and put in plate take a heaping amount of garlic mash potatoes and add to plate. garnish with vegetables of your choice.
